"The natural lactic acid and fermentive enzymes which are produced during the fermentation process have a beneficial effect on the metabolism and a curative effect on disease. Lactic acid destroys harmful intestinal bacteria and contributes to the better digestion and assimilation of nutrients. Fermented foods can be considered predigetsed foods. They are easily metabolized....Fermented foods cleanse the intestinal tract and provide a proper environment for the body's own vitamin production within the intestines. They also help a person with constipation problems." Dr. Kuhl Checkmate for Cancer

1 cup soaked (for 12~24 hours) almonds

1 cup water

½ teaspoon ncp bRAND Probiotic Blend Powder (See Product Page)

Blend well until creamy, adding more water if necessary. To culturize, cover with a paper towel or lid that allows some air circulation and let sit overnight at room temperature. This will make a mild culture. Seal and place in the refrigerator once it's cultured. It will continue to culture even in the fridge, becoming a bit more sour as time progresses. It is still good to eat, however.

*Save about 2 Tablespoons as a starter to mix into the next batch. You will need less than half of the ncp probiotics for future batches.
